Wifi operates on multiple bands. 2.4 GHz reaches further but is slower and busier; 5 GHz (and 6 GHz) is faster but has less range.
Band steering pushes devices that receive well enough onto the faster band, keeping the busy band free for devices that really need it.
Combined with roaming between access points, that keeps the connection stable as a guest walks from reception to their room or across the site.
